Easy Chocolate Mousse

This classic mousse uses just 3 storecupboard ingredients:  chocolate, eggs and sugar.  You can add a shot of coffee, amaretto, brandy or orange zest to the melted chocolate if you want some added flavour but it is nice kept simple.

Chocolate Mousse

This classic mousse is really quick to make. As a general rule you need 30g chocolate, 1 egg and 1 tsp sugar per person.  You can also make it dairy free by using dairy free dark chocolate (which most good quality 70% chocolate is).

Instructions

You will need

3 medium eggs
90g dark chocolate (70% cocoa) *Note that this recipe only works with dark chocolate
3 tsp sugar

– break the chocolate into pieces and melt (either by putting bowl over, but not touching, a pan of boiling water or using the microwave)
– separate the eggs: place the whites in a large clean bowl and the eggs in another
– add the sugar to the egg whites and whisk to stiff peak.  Then whisk the egg yolks into the melted chocolate
– fold in the egg white.  To start with, take a large spoonful of the egg white and stir it through the chocolate mix to loosen the mixture.  Then gently fold in the remaining egg white until there are no streaks
– pour into bowls and refrigerate until set

Tips, Tricks and Teaching Info

Egg Whites

Egg whites hate grease so before you start make sure that the bowl and whisk beaters and clean and grease free.  Also make sure that there is no egg yolk in the egg whites or they won’t whisk up properly

Baked Mousse

If you put the mousse into oven proof ramekins it can be baked to make a little chocolate soufflés.  Preheat the oven to 200*c.  Sprinkle the top of the mousse with a tsp of caster sugar, place the ramekins on a baking tray and bake in the oven for 6-7 minutes.  Serve immediately with a dollop of cream
