These cookies are my little boy’s favourite. They are really quick to make and you can change the ingredients depending on what you have in the cupboard

Easy Chocolate Chip Cookies

These cookies are a really easy store cupboard bake and can be on the table in under 30 minutes. Add chocolate chips or swap them / add extra dried fruits and nuts.

Instructions
You will need
120g butter
80g light brown sugar
50-60g caster sugar (the more sugar you add the more chewy the cookies will be)
1 egg
1 tsp vanilla extract
180-200g plain flour (or 150-170g plain flour and 30g cocoa powder) – (the less flour you add the more chewy they will be)
½ tsp bicarbonate of soda
pinch of salt
optional: 1 tsp cornflour
Large handful of chocolate chips (dark / milk / white or a mix)
- Preheat the oven to 180*c and line a baking sheet with baking paper
- Place the butter, sugars, egg and vanilla in a bowl and whisk until pale and fluffy
- Add the flour, bicarbonate of soda, salt and cornflour if you are using it and stir through until well incorporated. Finally stir through the chocolate chips
- Spoon walnut sized balls of cookie dough onto the baking sheet, leaving 5 cm between each ball as the cookies will spread
- Bake for 8-10 minutes until golden (note that the cookies will still be soft when they come out of the oven – the less time you cook them the more chewy they will be). Allow to cool on a rack then store in an airtight container


Tips, Tricks and Teaching Info
Line Your Tray
Make sure you line your tray with baking paper so that the cookies don’t stick. You can then slide the baking paper off the tray onto a cooking rack
