Gluten & Dairy Free Double Chocolate Cookies

You will need (Makes 16)

100g dairy free dark chocolate (we use Coco Loco Organic Dark Chocolate)
100g coconut oil, melted
100g rapadura or dark brown sugar
pinch of salt
30g cocoa
70g ground oats (just grind oats to a flour in a coffee grinder/food processor)
80g ground almonds
1/2 tsp baking powder

  • Preheat the oven to 180*c and line two baking sheets with baking paper
  • Chop the chocolate into chips
  • Melt the coconut oil and beat it together with the rapadura and egg
  • Stir through the salt, cocoa, ground oats, ground almonds and baking powder until just combined
  • Form the dough into walnut sized balls and squash down with the back of a spoon
  • Bake for 10-12 minutes (the cookies will still be soft when they come out of the oven but will firm up as they cool)
  • Store in an airtight container
