Our Essentials courses are aimed at anyone wanting to build their confidence in the kitchen whether you are a complete beginner or someone who has done a bit of cooking but would like to build your skills with a repertoire of easy to cook, everyday recipes.  We have designed the course as either a standalone workshop or one of 3 mix and match workshops which run throughout the year (one each term) and can be done in any order.  Each workshop focusses on core skills which will then translate into a number of recipes, allowing you to quickly build a broad repertoire of tasty, go-to recipes that you can cook with confidence.

At this hands-on 4 hour workshop we will look at:
– Stews and pies
– Soup
– Quick weeknight pasta sauce
– Steak and chips
– Salad dressings
– Thai curry
– Apple Tart / crumble
– Chocolate mousse
– hearty breads
*Vegetarian options are available for all of the dishes other than the steak
While we cook, we will look at knife skills, roasting, veg prep, sauce making, bread and baking, as well as thinking about menu planning, batch cooking and using leftovers.
If you would like to complete the full course:
Course 1: Saturday 29 February AM will cover:
– Roast chicken (and think about different ways to serve it)
– One pan tray bakes such as cod with tomato and chorizo
– A quick and easy curry
– A minced based dish such as chilli or meat ragu
– A really good tomato sauce for pasta / pizza / meatballs
– A simple bread dough for making pizza and flatbreads
– Chocolate brownies
– Flapjack
Course 2: Saturday 6 June AM will cover:
– slow roasting (lamb or pork)
– one pot casseroles / cassoulets
– cheese sauce (for macaroni cheese, cauliflower cheese, pasta bakes, fish pie)
– risotto
– stir fry
– frittata
– a quick all in one cake
– fruit fools
– simple enriched bread
